Ingredients you’ll need:
1 Egg
1/2 teaspoon Pink Himalayan salt
1/2 teaspoon Baking Powder (I did do a TAD over half a teaspoon on mine)
1/2 cup Coconut Sugar
1/2 teaspoon Vanilla Extract
1 cup Almond Butter (the warmer and runnier it is, the easier it is to work with!)
1/2 cup Dark Chocolate Chips
1 large Courgette, finely grated
Fry light cooking spray
Equipment you’ll need:
Wooden Spoon
Large glass mixing bowl
Measuring cups and spoons
Grater
Loaf tin
Chopping board
Method:
Preheat the oven to 180 degrees celsius
Measure out all the ingredients
Finely grate the courgette on a chopping board (no need to pat it dry, the wetness keeps the cake moist)
In the large glass bowl, combine all ingredients except courgette and dark chocolate chips
Gently fold in the grated courgette and dark chocolate chips
Spray your loaf tin with fry light (or line with baking paper)
Pour your mixture in
Place in middle shelf of the oven and bake between 25-30 minutes or until golden brown. (Keep an eye on it as the top can get brown quickly)
Leave it to cool for five minutes.
